The cynara scolymus, commonly known as artichoke, is renowned for its edible 'heart' found in the centre of the bud, known as the choke or beard. Cynarin, a plant chemical found in cynara, is believed to be the source of its medicinal properties. The highest concentration of cynarin is found in the leaf pulp of the artichoke.
